If I Knew You Were Coming…

If I knew you were coming I would have baked a cake. Actually I did, but you have yet to show up to get a piece. Maybe you’re too far away or maybe you didn’t get my invite. No that’s not the case because you’re here. Hey, this is Tom’s fiance’ April and I wanted to share a favorite cake recipe that my grandmother gave me.

3 sticks butter room temperature
2 cups sugar
1/2 tsp salt
2 tsp almond extract
1/2 tsp baking powder
1/2 tsp baking soda
3 cups all-purpose flour
6 large eggs room temperature
1/2 cup plain yogurt
1/2 cup milk
4 oz. Ghiradelli dark chocolate

Preheat oven to 325 degrees. Cream together butter and sugar till mixture is fully incorporated. Add the eggs one at a time at 30 minute intervals. Add the almond extract and mix again. Melt chocolate in a double boiler and let cool.

Add the yogurt and milk and incorporate in mixture. Then in thirds add the dry ingredients on low speed making sure the ingredients are competely mixed before adding another third. Fill your cake pan with half the mix. After the chocolate has been cooled add to remaining batter. Combine until thoroughly mixed. Stir in the chocolate batter in crazy loops but not too much. Bake between 45-60 minutes depending on how your oven’s temperature fluctuates. Use a toothpick to test cake after 40 minutes. When toothpick comes out clean, it is done. Cool for an hour and frost with your favorite homemade frosting. Don’t make a homemade cake and ruin it with store bought frosting.

      If you like that, you’d kill for my carrot cake. I’ve gotten a marriage proposal from a girl eating that. I’m spoken for though…
