Why We Should Never Forget

Never give up, Never surrender! No, I’m thinking of Galaxy Quest. What I meant to say is We Will Never Forget. But what is it that we should never forget?

Ten years ago and a day America suffered a devastating loss of life at the hands of terrorists. An event many consider to be this generation’s Pearl Harbor. The number of dead totaled 2,976 with 2,740 being Americans. The number of people who were touched and troubled by the attacks of 9/11 number in the millions. People all around the globe felt out pain. People of every nationality, age, religion were horrified at the catastrophe. We were a United Planet and not just a union of like minded states.

I used to think that we should not forget the damage, devastation and death that occurred on September 11, 2001 but more and more I don’t think that anymore. I don’t feel that should be our focus. I used to think we should never forget because we needed to exact our vengeance on those who committed the atrocity.

I’m a little older and a little wiser now and I think back to the atmosphere here and abroad in the days that followed the attacks. I thought about the fellowship and the friendships that were created. I thought about how much the crime rate dropped and how families were spending quality time together. I thought about how the tragedy brought us together as one human family.

I’m not thinking for one minute that we need another terrorist attack for us to get back to treating friends and foes humanely. What I am thinking is that it should not have to take a war, a man made tragedy, or even an act of God for us to be kind to one another.

I specifically chose not to post this yesterday. I wanted those who chose to respect the day, to do so. Today on September 12, 2011 I say we should never forget – we should always remember that the people next door, next continent are out brothers and sisters. We are all family and family members are meant to love one another. So I say to my brethren and sisteren all around this great big beautiful world, Peace.

Also I would like to acknowledge the brave men and women in the armed forces stationed all over the world, and their families; those in combat in Iraq and Afghanistan, your sacrifice does not go unnoticed. We appreciate you. Come home safely.

The Meaning of Time

The past is a blur.
My tiresome teenage eyes seeks

Today I’m A Woman In Love

Mud and Memories

The dust on this long forgotten road stays in between my toes
Coloring my sore bare feet grey
… the color of the sky the last time we spoke
Glimpses of what once was walk beside me
But speech is never provoked
What is left to say when words were never enough
… and always too much

Thick moist air weighs heavy on my breathing
I kneel down and rest my hands in this dirt
Memories of fingertips and luscious lips flash before my eyes
Needed to get away when you were leaving
Lies in apologies disguised…
My heart had never forseen how this would hurt

I raise my head to the sky as the clouds begin to cry
As if God and all the angels can feel my pain

Slowly I get up out of this mud of “foregone” and “forsaken”

“Thanks for the lessons learned, keep what you have taken

I Want You

Baked Chicken Italiano Recipe

DISCLAIMER: I am very sleepy and what appears on the computer screen before you may or may not be coherent.

It’s no secret that one of my favorite rooms at home is the kitchen. I feel very comfortable there and love to cook for those I love or care about or maybe even hate, but the latter has not happened! I don’t hate anybody anyway.

Back to the subject at hand. Cooking is perhaps my favorite hobby and having several people over for dinner tonight I thought I could post about the meal and leave a recipe. The chicken recipe is not mine. Iron Cook Carl who hasn’t posted in forever either is the creator of this recipe.

Tonight I am planning on cooking for eight. It’s kind of a big deal so I am going all out on some courses but for the main course I thought I would keep it simple with baked chicken. To start the meal off I am preparing a seafood bisque. Actually this is my first time preparing a bisque the correct French way. I still have to make it to the market to get the mushrooms. The soup is going to be a crab, lobster and mushroom bisque.

The second course is an radicchio and arugula salad with orange and grapefruit supremes and a lemon vinaigrette. The third course consists of the baked chicken Italiano (see recipe below), cous cous and broccoli rabe. Dessert is also a recipe I’m taking from Carl.

Blue Velvet Cake is a take on Red Velvet cake. It is exactly the same Paula Deen recipe I have been using myself and all he did was substitute red food coloring with blue. He made cupcakes for his kids in the shape of Blue’s paws from Blue’s Clues. I’m just making a four layer cake with loads and load and loads and loads of frosting!

Baked Chicken Italiano Recipe

Emeril’s Essence Seasoning
5 garlic cloves
1 large onion cut in half
1-2 bottles of either Kraft or Wish Bone House Italian dressing
10 chicken quarters (free range, organic)

Keep leg and thighs attached. Clean chicken and remove skin if you prefer less fat in your diet. Season both sides of chicken with Emeril’s essence and place in large baking pan. Smash and remove the skin from the gloves of garlic. Cut onion in half and place in baking dish with garlic. Add Italian dressing to pan by pouring along sides not directly on chicken.

Place in 350 degree oven for at least an hour, until juices run clear or until internal temperature reaches 165 degrees. Turn chicken at least once during baking. Carl says after the chicken is done he drains the dressing and returns the chicken to the oven to get crispy.

Don’t forget the bubbly!
